1940's

Things were moving along better than expected, even though business activities were suspended by the war, but the most tragic years in the history of the company had not yet begun.

Against countless obstacles, continuous attempts were made to maintain contacts with our customers; we never imagined the catastrophe that awaited us. The railroad siding, so convenient for shipping our products, had become a target for destruction.  
 


The production facility was totally destroyed in 1944 along with the customers database.
The company was shut down for four years; in 1948 Giovanni Carli and his family, with a resolute spirit of revival, decided to invest all of the resources put aside during the good years to remove the debris of war and build their future.

1950's

Fratelli Carli started contacting customers identified from traces of information recovered from the debris; at the same time, the company launched production operations with new machineries and a so called traditional olive mill. The photograph depicts a type of olive mill still used by many producers. It is composed of two millstones that roll around in a basin loaded with olives to be crushed. The oil and water are drawn from the crushed mass during the grinding phase. The remaining mass is then collected and pressed to obtain the residual olive oil and water therein. Olive oil is separated from the water by centrifugation, as it is in the most modern mills.
