How long is it possible to preserve Olive Oil?

The expiry date of Carli Olive Oil is fixed at 23 months after its date of bottling. Since it may happen that oil remains in stock or unsold for long periods of time, the concept of expiry date is fundamental for companies that distribute to stores. At Fratelli Carli this is impossible because we are selling directly to consumers and always supplying clients with fresh products.
The higher the original acidity of the oil is, the easier the oil will go rancid. Since Olio Carli always has a very low level of acidity, its natural process of going rancid is slower. 
However, while months are passing, oil tends to lose its original fragrance; so, it is better to avoid too abundant supplies of this product that will probably last for more than one year. After that time oil doesn’t become inedible or harmful, but it is simply less fragrant.
