Caramelised Pineapple Dessert

Ingredients (6 servings):
For the dough: ½ cup of flour, 5 TBS of corn flour, 6 TBS of sugar, 1 Tea spoon of baking powder, 3 TBS of Carli Pure Olive Oil, 4 eggs, a pinch of salt.
For the filling: 1 pound of pineapple slices.
For the caramel sauce: 5 TBS of sugar, 3 TBS of water, 4 TBS of Carli Pure Olive Oil.

Time required: 10 minutes preparation time + 20 minutes cooking time

Preparation
In a large bowl, beat the sugar, salt and eggs until the mixture whitens and is creamy. Add the oil. Mix together the flour, corn flour and the baking powder, and then gently incorporate all the ingredients together to make a creamy mixture. Preparation of the caramel: in a saucepan dissolve the sugar in the water and oil over a gentle heat until the mixture browns and pour immediately into a high sided tart dish. Lay the pineapple slices on top and then pour over the creamy mixture. Cook for 15 to 20 minutes in an oven preheated to 350°F. Turn out of the tin immediately and serve warm. Carli Olive Oil gives this dessert an exceptional moistness and the caramel combined with the pineapple adds an exquisite sharpness to the flavor.
